My New Year’s resolution is to try my favorite fruits and veggies in new ways. For far too long I’ve been stuck in a rut of steamed broccoli, grilled asparagus and fresh salads. My interest was peaked when, after many years of avoiding raw cauliflower, I was introduced to mashed cauliflower. How could it be that I disliked one form as much as I loved the other? Now I’m on a mission.

Here are a few ‘new ways’ to try some of your favorite [or not] fruits and veggies …

Brussels Sprouts
Try shredding Brussels sprouts and cooking in a skillet over medium heat for 10-15 minutes. Top with pine nuts and crumbled turkey bacon or pecans and currants.

Pears

    • Top Wasa crisp crackers with light cream cheese and sliced pears. It makes a really satisfying snack.
    • Try a pear and celery salad. Mix diced celery and pears with equal parts cider vinegar and honey. Top with pecans and finely diced cheddar cheese. Sprinkle with salt and pepper.

Sweet Potatoes
Two new recipes I plan to try this winter are Sweet Potato and Black Bean Chili and Sweet Potato-Peanut Bisque.

 

Apples
Have you ever had a turkey sandwich with Granny Smith apples, sliced brie cheese and cranberry mustard?

 

Mushrooms
I love mushrooms and I’m working on a recipe for Oat Mushroom Patties.
