Summer’s here! The days are getting longer and hotter by the minute. School is out for summer, the sun is shining, and the pool water is crystal clear. It is nearly impossible to drag the kids, or even yourself, away from the poolside. It’s great to be outside and active in the fresh air, but it’s important to have a plan for when the urge to snack hits.

 

Fruits and vegetables are natural nutrient powerhouses and the best snacks you can find. Low in calories, and packed with vitamins, minerals, phytonutrients, and antioxidants, you can’t go wrong when selecting produce for your poolside snack. Summer is a great time of year to take advantage of fresh produce such as bell peppers, berries, cantaloupe, eggplant, peaches, summer squash, and many others. Here are some ideas for great summer snacks and two quick and easy recipes to make any pool party a success!

  • Bread strips of eggplant and bake. Dip in tomato sauce
  • Let your kids pick their favorite fruits and vegetables and make kabobs
  • Eat fruits or vegetable pieces with your favorite dip
  • 100% fruit juice popsicles
  • Fresh salsa with baked pita chips
  • Add your favorite fruit to sugar-free gelatin
Fruit Smoothie
A refreshing, sweet treat that is fat-free and loaded with vitamin C and fiber
Makes 6 one-cup servings
Directions: Blend ingredients and serve.

 

Fresh Mozzarella and Tomato Salad
This tasty snack is high in vitamins A and C and is a good source of potassium
Makes 4 servings
  • 2 large ripe tomatoes, peeled and sliced 1/4-inch thick
  • 8 ounces fresh mozzarella, sliced 1/4-inch thick
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons extra-virgin olive oil
  • 8 fresh basil leaves
Directions: Arrange the tomato and mozzarella slices on a platter. Sprinkle with salt and pepper and drizzle with oil. To finish, garnish with the basil and serve immediately.
