Sweet Potato & Black Bean Stew

This main dish stew is savory as much as it is sweet. The sweetness of orange sweet potatoes is dressed in the robustness of black beans.


  1. Heat oil and briefly. Saute onion until they smell sweet. Add the cumin and saute until it smells toasted. Add the chard and heat through.
  2. Add sweet potatoes, black beans, orange juice, and vegetable stock. Bring to a boil and turn down to a simmer until the potatoes are tender, about 20 minutes.
  3. Add the vinegar, salt and pepper. Serve as a stew or over brown rice or couscous.
