Stacked Lentil & Yogurt Salad

This impressive appetizer has layers of avocado, creamy yogurt, hearty lentils and fresh tomato & onion.


  1. Combine the first six ingredients in bowl. Stir to mix well. Place bowl in refrigerator to chill.
  2. Combine diced tomato and onion together. Toss with spoon to mix. Set aside.
  3. To build – begin layering the ingredients using glass cups or a ring mold. Place about ¼ of Avocado down as bottom layer.
    Top with layer of yogurt mixture. Press gently but firmly.
    Spoon tomato and onion mixture on top. Press gently.
  4. Garnish each stack with cilantro.
  5. Serve with corn chips, toasted baguette or with a poached egg.
