Fennel Citrus Salad

Preparation Time: 10 minutes
  • 1 medium (about 1 ½ lbs) fennel bulb, thinly sliced
  • 4 medium navel oranges, peeled and sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup calamata olives, pitted
  • 2 tsp olive oil
  • 2 Tbsp fresh lemon juice (or 100%)
Combine fennel, oranges, red onion and olives in medium bowl. Drizzle with olive oil and lemon juice. Toss gently and serve.
