- Slice all produce items into ¼ to ½ inch strips.
- On high heat sauté peppers, zucchini, jicama, and ½ of the Envy™ slices. Combine the sautéed Envy™ mixture with the onion mixture. Set aside.
- Sauté onions, jalapenos, and garlic in a hot skillet until lightly caramelized. Then season with cumin and oregano. Add chili powder and salt and pepper, if desired.
- Add black beans to the sauté mixture. Top with a squeeze of lime. Then garnish with cilantro and additional raw Envy™ apple slices.
- Serve with tortillas.
