Our take on tzimmes, a traditional sweet stew, features carrots, sweet potatoes and dried prunes and apricots. It gets its warm, cozy flavor from cinnamon and ginger – and a hint of bright citrus from orange juice. It’s perfect to serve for Hanukkah or on any chilly evening for a hearty, fruit- and vegetable-forward meal.

Instructions

  1. Preheat oven to 350°F.
  2. Peel and cut carrots and sweet potatoes.  Transfer to a 9×13 casserole dish.
  3. Toss with dried prunes, dried apricots, olive oil, salt and spices.
  4. Pour in orange juice.
  5. Cover tightly with foil and bake for 60 minutes.
  6. Remove foil and continue baking for 20-30 minutes until the liquid coats vegetables instead of pooling, and texture looks glossy.
  7. Serve warm.
