Strawberry Rhubarb Compote

Instructions

  1. Combine the first three ingredients in a large saucepan. Stir over medium heat until sugar dissolves. (Add a small amount of water if needed)
  2. Reduce heat to a simmer and cover until rhubarb is tender, stirring occasionally, about 8 minutes.
  3. Stir in strawberries and cook 2 more minutes. Transfer mixture to bowl.
  4. Cover and chill until cold, about 2 hours.
