These Watermelon Sparkling Jello Shots are light, fruity and fizzy — with or without the booze. A fun, refreshing treat that’s sure to be the star of your summer party!
Instructions
- Blend watermelon, lime juice, honey and salt in high-speed blender until fully liquid.
- Using a fine mesh sieve, strain the watermelon juice into a large bowl.
- Sprinkle gelatin over the top of the watermelon juice. Whisk to combine.
- Pour 1 cup of prosecco into a microwave-safe dish. Heat in the microwave (about 1 minute) until hot, but not boiling. Pour heated prosecco into the watermelon and gelatin mixture. Stir to combine. Let cool slightly.
- Add vodka and remaining prosecco to the mixture. Stir to combine. Let the foam settle.
- Pour into small (2 oz) cups with lids or into a lightly greased 13×9-inch baking pan (see notes).
- Let set overnight before serving.
Recipe Notes:
- To make non-alcoholic, swap the vodka out with water or 100% juice and swap the prosecco with a sparking juice or cider.
- To customize, swap the vodka out for your favorite liquor and the prosecco with champagne or other sparkling wine.
- If using a baking pan, lightly grease with a flavorless oil, like canola oil. Once gelatin is set, cut into 1-inch cubes to serve.
- For best results, use a serrated knife to cut the jello shots into squares once fully set.
