Red, White & Blueberry Jello Shots

These Red, White & Blueberry Jello Shots are a festive, fruity twist on a party classic layered with 100% juice, coconut milk and fresh blueberries for a celebration-ready treat that’s as delicious as it is dazzling. Perfect for your Fourth of July bash, with or without the booze!

Instructions

  1. Begin by lightly greasing a 13×9-inch baking pan with flavorless oil (I used canola oil).

For Red Layer:

  1. Add 1 cup of your red100% juice to a medium sized bowl. Sprinkle with gelatin and whisk until smooth.
  2. Heat remaining 1 cup of juice in microwave (about 1 minute) until hot, but not boiling. Add to bowl with juice and gelatin. Whisk until smooth. Allow to cool for a minute and then add in the vodka, stirring to combine.
  3. Pour Red Layer into prepared baking pan. (Pro tip: set the baking pan in the refrigerator first, then pour in the red layer mixture to avoid spilling!). Allow to set up for at least 2 hours before adding the White Layer.

 For White Layer:

  1. Add ½ of the can of coconut milk to a medium bowl and sprinkle with gelatin. Whisk until smooth.
  2. Heat remaining coconut milk in microwave (about 1 minute) until hot, but not boiling. Add to bowl with coconut milk and gelatin. Whisk until smooth. Allow to cool for a minute and then add in the vodka and vanilla extract, stirring to combine.
  3. Pour White Layer on top of Red Layer. Allow to set up for at least 2 hours before adding the Blueberry Layer.

For Blueberry Layer:

  1. Add 1 ¼ cups of water and all of the lemon juice to a medium bowl. Sprinkle with gelatin and whisk until smooth.
  2. Heat remaining water in microwave (about 1 minute) until hot, but not boiling. Add stevia drops to the heated water and stir to combine. Add the mixture to the bowl with water, lemon juice and gelatin. Whisk until smooth. Allow to cool for a minute and then add in the vodka, stirring to combine.
  3. Pour the clear mixture over the White Layer. Sprinkle the blueberries even across the top layer. Allow the gelatin to set up overnight before cutting them into 1-inch cubes to serve.

Recipe Notes:

  • To make non-alcoholic, omit the vodka in each layer and substitute with more of the base liquid (juice, coconut milk or water). You may have to adjust the lemon and stevia in the Blueberry Layer to your preferred taste/sweetness when making these alterations.
  • You can substitute the vodka for your preferred liquor.
  • For best results, use a serrated knife to cut the jello shots into squares once fully set.
