Rainbow Veggie Bowl With Orange Ginger Vinaigrette

A little sweet, a little spicy and lots of veggies! You won't be disappointed with this colorful bowl.


  1. Cook soba noodles according to package directions. Rinse with cold water and set aside.
  2. Meanwhile, in medium bowl, whisk together orange juice, olive oil, rice vinegar, sesame oil, soy sauce, minced ginger, crushed red pepper and salt. Set aside.
  3. In a large bowl, combine soba noodles, cabbage, carrots, cucumber, tomatoes, cilantro, basil and green onions. Toss together with dressing and serve.
