Our tomato and lentil soup adds a little oomph to the craveable flavor of classic tomato soup, combining spinach, lentils, a range of spices and bright, tangy lemon juice. This one-pot dish is quick and easy to make in just 30 minutes for a satisfying lunch for kids and grown-ups. It’s also yummy to pair with your favorite grilled cheese.
Instructions
- Heat olive oil in a pot over medium heat. Add onion and cook until soft. Stir in garlic and spices and cook for 30-60 seconds until fragrant.
- Add lentils, tomatoes, and broth. Bring to a boil, then lower to a steady simmer for approximately 15 minutes. Cook uncovered until lentils are soft and starting to break down. For a smoother texture, cool mixture and blend to desired consistency. Add back to pot and bring to a simmer.
- Stir in the greens and cook just until wilted, about 2 minutes.
- Season with salt and pepper. Add lemon juice for brightness.
- Serve hot.
