Instructions
- Cook quinoa according to package instructions.
- Combine cucumbers, tomatoes, bell pepper, red onion, olives, parsley, basil, mint, and chickpeas in a large bowl. Add cooked quinoa.
- Top with lemon zest and juice. Add plenty of white wine vinegar and several glugs of olive oil. Season with salt & pepper.
