Gingered Sweetpotato-Apple Salad

Here is a great recipe for sweet potatoes that your guests won't expect.

Instructions

  1. Roast the sweetpotatoes – preheat oven to 425 degrees. Drizzle olive oil over sweetpotatoes, stir to coat evenly. Spread sweetpotatoes on a baking sheet. Bake for 25 minutes, stiring the sweetpotatoes halfway through.
  2. Combine roasted sweetpotatoes, pineapple, apple, celery and cashews in a large bowl.
  3. In a small bowl, combine salad dressing and ginger; pour over sweet potato mixture; toss lightly.
  4. Cover and chill for at least 1 hour.
  5. Serve over salad greens.
