Farmers Market Gazpacho

Nothing beats vitamin-packed gazpacho to satisfy on a hot day. Very similar to salsa, it is great as an appetizer or snack. Serve with warmed whole wheat bread or baked chips.


  1. Combine all ingredients, except salt, pepper, and lemons in a bowl.
  2. Remove 2 cups of the mixture and reserve.
  3. Using a blender or food processor, purée the remaining mixture in the bowl.
  4. Add back in the reserved 2 cups to the mixture.
  5. Season with lemon juice (and salt and pepper) as desired. Serve.
