Instructions
- Heat olive oil in a large skillet over medium heat. Saute the onion, red bell pepper, and zucchini until softened, approximately 6-8 minutes.
- Add asparagus and cook until it brightens in color for an additional 2 minutes.
- Scoop out vegetable mixture and set aside.
- Add crushed tomatoes, garlic and spices to the pan and simmer until sauce thickens slightly, approximately 8-10 minutes. Add back in veggies.
- Make small wells in the sauce and crack 4-6 eggs into them. Cover and cook on low until eggs are done to your preference (approximately 5-8 minutes).
- Serve with crusty bread for dipping.
