Instructions
- Toss sweet potatoes with half the olive oil and spices, plus a pinch of salt and pepper. Toss brussels sprouts with remaining oil and spices.
- Preheat air fryer to 400°F. Add sweet potatoes for 7 minutes. Shake the basket and add brussels sprouts to the same basket as sweet potatoes. Air fry for another 7 minutes until browned and crisp.
- While the veggies are in the air fryer, warm the beans in a pot over medium-low heat with a splash of water and a pinch of cumin and salt.
- Whisk all tahini drizzle ingredients together until smooth and pourable.
- Build the bowl: vegetables, plus beans, topped with tahini drizzle. Serve warm.
Note: Can also heat beans in microwave for 20-30 seconds.
