How can I ripen persimmons?

Persimmons will continue to ripen and soften on the counter at room temperature. If you wish to speed up the ripening, you can wrap the persimmons in paper or a paper bag. This will increase the concentration of ethylene gas which ripens the fruit. Once ripe, store in the refrigerator for up to 3 days.
