Our take on tzimmes, a traditional sweet stew, features carrots, sweet potatoes and dried prunes and apricots. It gets its warm, cozy flavor from cinnamon and ginger – and a hint of bright citrus from orange juice. It’s perfect to serve for Hanukkah or on any chilly evening for a hearty, fruit- and vegetable-forward meal.
Instructions
- Preheat oven to 350°F.
- Peel and cut carrots and sweet potatoes. Transfer to a 9×13 casserole dish.
- Toss with dried prunes, dried apricots, olive oil, salt and spices.
- Pour in orange juice.
- Cover tightly with foil and bake for 60 minutes.
- Remove foil and continue baking for 20-30 minutes until the liquid coats vegetables instead of pooling, and texture looks glossy.
- Serve warm.
