Pot ‘O Gold Snack Board

By

The best part of this board? It’s a fun way to get kids (and adults) to eat more fruits and vegetables while enjoying the festive spirit of St. Patrick's Day.

Instructions

  1. Start with a Base: Choose a large platter or cutting board to create your board. Begin by arranging the mini apples and sliced kiwis in a circular shape to create the “pot” part of your snack board. The green of the kiwis and the red of the apples will immediately pop, making your board look both festive and fresh.
  2. Add the Gold: Place the caramel chocolate candies wrapped in gold in the center or along the outer edge of the board. Their shiny wrappers will provide a dazzling effect and represent the “gold” at the end of the rainbow.
  3. Fill in the Gaps: Use the sour rainbow strips to fill in the spaces around the fruit. These strips can be laid flat or twisted for added fun. Cut them into smaller pieces if you’d like to give more people a taste.
  4. Dip or Decorate: On one side of the board, place a small bowl of icing or piping bag of icing and a bowl of peanut butter. This will give everyone the opportunity to dip their apples, kiwis, and even the rainbow strips into something extra sweet.
  5. Final Touches: Add any optional garnishes or extra treats, like mini marshmallows, mint leaves, or sprinkles. The key is to keep things fun, festive, and colorful. The board should have a balance of fruit, candy, and savory dips to create a variety of textures and flavors.
