A surprising and delicious mix of zucchini, cut into “noodles,” and fresh strawberries with shrimp and a light Asian dressing.

Preparation Time: 20 minutes

Asian Dressing

  • 1 ½ Tbsp peanut oil
  • 2 Tbsp rice vinegar
  • 1 Tbsp soy sauce, less sodium
  • 1 tsp sugar
  • ⅛ tsp pepper

Salad

  • 2 medium zucchini
  • 2 cups fresh strawberries
  • 2 cups baby spinach
  • 12 ounces medium shrimp, cooked, peeled, chilled
  • 2 tsp sesame seeds
In a small bowl whisk together dressing ingredients. Using a spiralizer*, make zucchini noodles. Slice strawberries. Place all salad ingredients in a large bowl. Add dressing and toss.

*A spiralizer is an inexpensive gadget that makes spiral noodle-like strands from own vegetables and fruits.

Complete this Plate: Serve with glass of lemon-infused water and brown rice.
