Make Half Your Plate Fruits & Veggies
|Serve up some summer fun with these lively lettuce wraps featuring blueberries, red bell peppers and grilled chicken.|

|Chop bell pepper and onion. Mix with remaining relish ingredients. Set aside. Coat chicken with canola oil and grill until done, turning as needed. Remove from grill; when cool enough to handle, cut chicken into bite-size chunks.
To make wraps: Place two lettuce leaves on each plate. Divide chicken and relish evenly among the eight lettuce leaves. Roll up and serve.
Complete this Plate: Each plate features two wraps plus a whole grain roll. Serve with a glass of non-fat milk.
