Preparation Time: 20 minutes
  • ¼ cup frozen broccoli
  • ¼ cup frozen or canned corn (drained if canned)
  • 2 seconds butter flavored cooking oil spray
  • 1 (6 inch) flour tortilla
  • 1 ½ tablespoons mild salsa
  • 1 ½ tablespoons cooked, shredded chicken breast
  • 1 tablespoon shredded cheddar cheese
  • ½ teaspoon dried chives
Pre-heat oven to 400o. Cook corn and broccoli according to package instructions. Spray cookie sheet with cooking oil. Place tortilla on oiled sheet. Top with salsa, cooked vegetables, chicken, cheese and chives. Bake for 10 minutes. Cut in quarters and serve.
