Spicy Tuna Pasta with Broccolini

This spicy tuna pasta makes good use of pantry staples and other ingredients you have on hand for a delicious, satisfying meal. Flaky canned tuna and crisp broccolini pair with penne pasta in a simple yet bold sauce with lemon, fresh garlic and chili garlic sauce. For a boost of fiber, you can swap in a whole wheat or whole grain pasta.

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta until just al dente. Reserve approximately ¼ cup of pasta water, then drain.
  2. While the pasta cooks, heat olive oil in a skillet over medium heat. Add broccolini and a pinch of salt. Cook 3-5 minutes, stirring occasionally, until broccoli is tender and bright green. You may need to add a few tablespoons of the pasta water if the broccolini looks too dry.
  3. Lower the heat slightly and add garlic and chili garlic sauce until evenly mixed.
  4. Add the tuna to the skillet and gently break into large flakes. Warm through for about a minute.
  5. Add drained pasta to the skillet. Pour in approximately ¼ cup of the reserved pasta water.
  6. Turn off the heat. Add the lemon zest and juice. Serve.
