Peach Panzanella Salad

  1. Preheat oven to 375ºF and spread cubed bread on a medium baking sheet. Drizzle with olive oil and toss to coat. Bake for 7-10 minutes to lightly toast bread. Cool to room temperature.
  2. Combine ingredients for dressing in a small bowl and whisk vigorously to combine.
  3. Combine mixed greens, peaches, tomatoes, pecans and toasted bread in a large bowl. Pour dressing on top and gently toss to coat.
  4. Transfer salad to a serving platter or bowl and top with crumbled goat cheese and fresh basil. Serve right away.
