Driving can be tiring, and metabolizing carbohydrates will make the driver sleepy. For your next road trip, pre-pack this vegetable and protein packed salad to avoid the pitfalls of fast food, gas station snacks, and vending machines and help your driver stay awake and alert.



  1. Mince garlic on a cutting board and sprinkle with salt.
  2. Using a knife, scrape the garlic and salt back and forth to form a smooth paste.
  3. Transfer paste to a bowl and whisk in oil, juice, mustard, shallot, and salt and pepper, then set aside.


  1. Arrange all ingredients in separate rows on a large serving platter.
  2. Drizzle dressing over all ingredients, season with salt and pepper.
  3. Garnish with basil and scallions just before serving.
