Niçoise Salad On The Go

Pre-pack this vegetable and protein packed salad on busy days for a grab-and-go meal option ready when you are!

Instructions

Dressing

  1. Mince garlic on a cutting board and sprinkle with salt.
  2. Using a knife, scrape the garlic and salt back and forth to form a smooth paste.
  3. Transfer paste to a bowl and whisk in oil, juice, mustard, shallot, and salt and pepper, then set aside.

Salad

  1. Arrange all ingredients in separate rows in 4-6 mason jars.
  2. Drizzle dressing over all ingredients, season with salt and pepper.
  3. Garnish with basil and scallions.
