- Add all ingredients into a shaker with ice and shake until well-chilled.
- Strain into a double rocks glass over fresh ice.
- Garnish with a fresh pineapple wedge and optional to top with toasted coconut shreds.
Make it a Mocktail: increase coconut water to 3oz & pineapple purée to 6 TB (¼ C + 2 TB)
*NOTE: Make pineapple simple syrup by combining 1 cup sugar with 1 cup water. Add the core of a pineapple into the mixture and bring to a boil. Remove from heat and allow mixture to cool to room temperature. Alternatively, use the syrup from canned pineapples.
