Chop & Toss Rainbow Salad

This salad is perfect for family dinners, neighborhood potlucks, or a fresh light meal any day of the week. The best part? The only skill you need is chopping! Toss together a mix of fruits and vegetables and you've got a bowl bursting with color, crunch, and nutrition. It's fresh, vibrant, and tastes as good as it looks.

Instructions

  1. Place grapes, tomatoes, peppers, edamame, avocados, feta, and cashews in a large bowl. 
  2. Drizzle with vinaigrette.
  3. Sprinkle on lemon pepper and salt.
  4. Toss to coat. 

Recipe Notes:

If making in advance add avocados just before serving to prevent from browning.

You can try different colored seasonal fruits and veggies in this salad. Yellow pineapple, crunchy green celery, or refreshing cucumber.
