Instructions
For the Thyme Simple Syrup
- Add 1 cup water and 1 cup sugar to a pot. Bring to a gentle boil until sugar has dissolved.
- Add thyme sprigs, stir once, remove from heat, and let sit covered for 10 minutes to steep.
- Strain, cool, and store in a glass jar or bottle.
For the Mocktail
- In a cocktail shaker, muddle blackberries gently with thyme syrup and lemon juice.
- Add 5-6 medium ice cubes to the shaker and shake briefly for a few seconds just to chill.
- Fine strain into a cocktail or stemless wine glass over fresh ice.
- Top with sparkling water and stir lightly until just mixed.
- Garnish with additional blackberries and a sprig of fresh thyme.
Recipe Notes:
For a cocktail version, top with 3 ounces prosecco instead of sparkling water. The thyme simple syrup yields approximately 1 cup and will store in the fridge for about 2 weeks.
