$5 Friday: Produce Packed Pasta

This budget-friendly recipe feeds five people for just under $25!

Instructions

  1. Cook and drain pasta as directed on package.
  2. While pasta is cooking, cook sausage as directed.
  3. While the sausage is cooking, cut up your veggies. Cut up the tomatoes and basil separately and set aside.
  4. Once cooked, take the sausage out of pan cut into ¼ inch slices and set aside.
  5. Add oil to the pan and saute the squash, onions, and red peppers for 2-3 minutes, then add broth.
  6. Once the broth is boiling turn to low and add tomatoes and basil stir and add sausage and pasta stir. Cover and simmer for 5 minutes, stirring occasionally.
  7. Once finished, divide pasta among plates. We topped our with cheese and ate our meal with broccoli and some bread. Enjoy!
