Choose mushrooms that smell fresh and earthy. Avoid mushrooms with soft spots, bruising or slime.
Wipe mushrooms gently with a damp cloth or soft brush to remove dirt. Store unwashed in a paper bag or wax paper in the refrigerator for up to 3 days.
