Cardoon is native to the Mediterranean region and is related to the artichoke. It is grown for its thick, edible stalks, that resemble celery. Cardoon has a mild, slightly bitter flavor similar to an artichoke heart. 

Choose straight, rigid cardoon stalks with fresh leaves. Avoid pithy, woody or limp stalks. Should smell fresh, not musty.
