Fall is upon us and I couldn’t be happier. Fall means changing leaves, chunky scarves and cozy evenings—oh, but don’t forget the food, how I love the food! While the rest of the seasons bring their own fair share of produce, there’s something to be said about the flavors of fall. In particular, a fan favorite—the butternut squash. This veggie has unbelievable potential. Check out why below!

Stock up! Butternut squash can be kept for up to a month (A MONTH!) in a cool dark place in your kitchen. This means there’s no excuse not to buy in bulk for all those tasty fall recipes!

Fabulous nutrition. The beautiful orange color of butternut squash tells us that it is an excellent source of vitamins A and C.

It’s versatile. Butternut squash can be the perfect addition to any soup, salad, casserole, or appetizer, among others! Roasting chopped squash is my favorite way to add this veggie to recipes as it brings out its sweetness. Another way to add squash to your next meal is pureeing it, using a blender or food processor. You can then add your butternut squash puree to soups, casseroles, or even mix with pasta sauce or pesto for a tasty and unique pasta topper!
