Fruits and vegetables are a great source of phytochemicals, fiber, water, and vitamins and minerals. Consumption of produce would be considered excessive if fruits and vegetables are replacing other foods that are needed for health including protein foods, calcium-rich foods, and whole grains. It would also be excessive if it was causing weight gain, but most people (if you are preparing fruit and vegetables in healthful ways and not drinking all of your fruit and vegetables) don’t usually eat enough to cause weight gain. Vegetarians, in fact, often weigh less than non- vegetarians because they do include a lot of fruit and vegetables in their diets. To create complete meals that are high in fruits and vegetables, but include other nutrients, make half-your-plate at every meal and snack fruits and veggies. This includes dried, fresh, frozen, canned and 100% fruit juice.
