Preparation Time: 25 minutes
  • 9 small red potatoes, diced
  • 2 cups green beans
  • 4 ½ cups mixed salad greens
  • 1 (14 oz) can artichokes, drained, rinsed and chopped
  • 2 medium tomatoes
  • 2 hard broiled eggs, sliced
  • 2 (6 oz) cans tuna, in water, drained
Cook potatoes in boiling water for 15 minutes. Add green beans for last 5 minutes of cooking. Drain and cool for 10 minutes. In large bowl, combine potatoes and green beans with remaining ingredients. Serve.
