Toast has been trending for some time now – just check out #toasttuesday on Instagram. And, I absolutely love it. Toast is no longer just for peanut butter and jelly or eggs anymore. This foodie revolution generated toasts topped with all sorts of nutrient-rich, and often surprising, fruits and vegetables. Not only is toast an excellent platform for adding more fruits and vegetables to our plates this holiday season, its creative nature allows individuals to express their personalized tastes. Here are some of my favorites …

8 Ways to Top Your Toast

  1. Mashed avocado, tomatoes, peppers, cilantro and a squeeze of lime
  2. Ricotta cheese, shredded Brussels sprouts and golden raisins
  3. Nut butter, blueberries and pistachios
  4. Hummus with tomatoes, cucumbers, olives, and feta cheese
  5. Roasted butternut squash, thinly sliced red onions, and gorgonzola cheese
  6. Mashed avocado and pickled radish
  7. Mashed peas, sautéed mushrooms, and grated parmesan cheese
  8. Cream cheese with roasted and sliced beets and carrots

Recipe

Sweet Potato Bites with Black Bean Hummus & Guacamole
Serves: 6-8

Ingredients

  • 2 medium-sized sweet potatoes, scrubbed and sliced into ¼ –inch rounds
  • 2 teaspoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon black pepper
  • 1 cup guacamole, homemade or store bought
  • 1 cup black bean hummus, homemade or store bought
  • Chopped cilantro and green onion for garnish, if desired

Directions

  1. Pre-heat oven to 400° F. Place the sweet potatoes in single layer on a large sheet pan and toss with olive oil and spices. Roast sweet potatoes until fork tender, flipping once, about 35 minutes.
  2. Place the sweet potato rounds on a large plate and top each one with a spoonful of hummus and guacamole. Top with chopped cilantro and green onion, if desired.
