Insider’s Viewpoint: Power to the Flower!

I know of a veggie that’s bumpy and pale
A cousin to broccoli, a cousin to kale
You can have it for breakfast or dinner or lunch
If cooked, it is creamy; if raw, what a crunch!

And get this! (You’ve just got to hear this alert…)
It can even be part of a frozen dessert!
When it comes to nutrition, it’s packed full of power…
Yes, friends – I am talking about CAULIFLOWER!

If you’re shaking your head now, I promise you’ll get
A whole new perspective on this white floret!
This veggie’s incredibly versatile
There are oodles of ways you can serve it with style
Ways so creative I couldn’t believe
Just wait ‘til you see what I’ve got up my sleeve!

Instead of potato, this makes a great mash
Or oh, by the way, an incredible hash!

You can chomp on it raw or give it a bake

The point of this blog is not just to shine light
On a veggie surprisingly full of delight
Its humble appearance might lack some ambition
But do not be fooled – it’s chock full of nutrition!

While citrus provides lots of Vitamin C
So does this veggie – it’s so clear to see.
It’s a really good way to get fiber and…Hey!
It’s also a great source of Vitamin K

If this veggie could talk, it be quite vociferous
About being proud that it’s purely cruciferous
Low in sodium and calories
And a very good source of manganese!

So whether you’re chopping or roasting or coring
I’m sure you’ll agree…
Cauliflower’s NOT boring!!!
