- Remove kernels from cooked corn on the cob.
- In a medium bowl, add corn, red onion, red pepper, apple cider vinegar, extra virgin olive oil, salt and pepper. Gently stir to combine. Taste and adjust with salt and pepper as needed.
- Cover and refrigerate for at least one hour to let flavors come to together.
- When ready to enjoy, pair with whole-grain crackers or tortilla chips; use to top grilled chicken or fish; or add to a large garden salad as a flavorful, crunchy topping.
