Potato-Cauliflower Mash

Who doesn’t love homemade mashed potatoes but what if you could add more nutrients, flavor? You've got it! This white veggie mash has a creamy texture and light garlic flavor.


  1. In a large pot, combine potatoes and cauliflower. Cover with water and bring to a boil; reduce heat. Simmer covered for 20 to 25 minutes or until vegetables are tender; drain.
  2. Return vegetables to pot. Add hummus and salt. Using a potato masher, mash vegetables to desired consistency. Transfer to a serving bowl.
  3. Swirl pesto into mash. Top with pepper and pine nuts, if desired.
