Chicken With Grape Tomato & Spinach Risotto

This dish is elegant enough for a dinner party and easy enough for a last minute supper!

Instructions

  1. Heat oil in large skillet over medium heat.
  2. Sprinkle chicken with seasonings. Add chicken to skillet; cover and cook about 10 minutes, stirring frequently until chicken reaches an internal temperature of 165 degrees.
  3. Add onion and sauté for about 1 minute. Stir in broth, water, rice, tomatoes, and spinach. Bring to a boil. Reduce heat to low and cover. Simmer about 10 minutes.
  4. Turn burner off and let stand for 5 more minutes or until rice absorbs most of the liquid.
