Instructions
- In large saucepot, heat oil over medium-high heat. Add bell peppers and onion; cook 6 minutes or until almost tender, stirring occasionally. Add garlic; cook 30 seconds or until fragrant, stirring frequently.
- Stir in remaining ingredients, except yogurt; heat to a boil. Reduce heat to medium-low; simmer 20 minutes or until thickened, stirring occasionally. Remove thyme sprigs. Makes about 12 cups.
- Serve stew topped with yogurt.
