Can I still eat carrots that have white strings all over them?


Carrots are a root vegetable and are therefore seeking moisture even after being picked by continuing to grow small roots (white strings). Carrots with small roots are fine to eat, just peel before consuming. If carrots are slimy or are packaged baby carrots and turning white, then they are probably past their prime and should not be consumed. Unwashed, whole carrots can be good in the fridge for at least two weeks.
