Roasted Sweet Potato Wedges

Preparation Time: 25 minutes
  • 2 medium sweet potatoes, peeled
  • 1 Tbsp olive oil
  • 1/2 tsp curry powder
  • 1/4 tsp ground cumin
  • 1/8 tsp ground cloves
  • 1/2 tsp salt
  • 1/4 tsp pepper
Preheat oven to 425° F. Cut sweet potatoes in half lengthwise and then each half into 6 wedges. Combine all ingredients in a bowl. Toss gently to coat. Place wedges on a baking sheet so they do not overlap. Bake until very tender. Serve.
