Oriental Sweet and Sour Vegetables

Preparation Time: 15 minutes
  • 1 Tbsp honey
  • 1 Tbsp lemon juice
  • 1 tsp soy sauce, low-sodium
  • ¼ tsp ginger
  • 1 cup (8 oz) 100% pineapple or orange juice
  • 1 Tbsp cornstarch
  • 2 tsp olive oil
  • 1 lb bag frozen stir-fry vegetables
Combine all ingredients except vegetables in bowl. Mix and set aside. Heat oil in skillet and add frozen vegetables. Cook for 3-4 minutes or until vegetables are crisp-tender. Add sweet and sour sauce and cook for another 2 minutes or until mixture comes to a boil. Serve.
