1. Preheat oven to 400F.
2. On a large baking sheet, roast a single layer of sweet potato rounds for 40-50 minutes, until tender and a bit crispy.
3. Toast your bread slices and spread about 1 tbsp of cream cheese onto one slice.
4. Build the sandwich by placing 2 layers of sweet potato rounds on top of cream cheese. Then add lettuce and top slice of bread.
