  1. Leave the skin on the apples, core and cut into 3-4 ¼ inch rings- depending upon the size of the apple
  2. In a small bowl, mix the orange juice and orange zest into the ricotta and set aside
  3. To assemble, spread 1 Tablespoon ricotta mixture on an apple slice, drizzle a little honey and sprinkle some candied pecans. Enjoy!
