Chickpeas or garbanzo beans, different names for the same thing and most people immediately think hummus. Hummus is good, but there are other ways to eat chickpeas. Try them toasted, warm, and savory with the Middle Eastern spice blend called Za’atar that’s becoming quite popular.

These gyros are great for meatless Mondays that need some flare, or … if you’re just looking for an easy dinner that’s ready in about 20 minutes, these will definitely do the job.

Directions
Preheat oven to 425°F.

Toasted Garbanzos
Drain garbanzo beans and pat dry.
In bowl, combine garbanzos, olive oil, and za’atar. Toss to coat well.
Spread into sheet tray lined with parchment.
Toast in oven 425°F approximately 20 minutes. Turning occasionally, until dark and crispy, but don’t let bean get hard and dried out.
Remove and set aside.

Goat Cheese Spread
Combine goat cheese with dill. Mix well. Squeeze lemon and add to taste.

Gyro
Spread goat cheese onto pita. Top with toasted garbanzos.
Add sliced tomato, sliced cucumber, and romaine.
