Za’atar Chickpea Gyros

Enjoy these protein- and fiber-packed gyros that come together in no time!


  1. Preheat oven to 425°F.

For The Toasted Garbanzos:

  1. Drain garbanzo beans and pat dry.
  2. In bowl, combine garbanzos, olive oil, and za’atar. Toss to coat well. Spread into sheet tray lined with parchment.
  3. Toast in oven for approximately 20 minutes. Turning occasionally, until dark and crispy, but don’t let bean get hard and dried out.
  4. Remove and set aside.

For The Goat Cheese Spread:

  1. Combine goat cheese with dill. Mix well.
  2. Squeeze lemon and add to cheese mixture, to taste.

For The Gyro

  1. Spread goat cheese onto pita.
  2. Top with toasted garbanzos.
  3. Add sliced tomato, sliced cucumber, and romaine lettuce.
