- Cut each tomato into 4 wedges, then cut each wedge in half horizontally and add to a bowl. Add thinly sliced onion to the same bowl.
- Whisk the olive oil, red wine vinegar, salt and pepper in a small bowl. Pour the dressing over the tomatoes and onion and toss.
- Add the herbs and gently toss to combine. Rest before serving (a crucial step!). This can be made up to one day in advance.
