This salad is better than the sum of its parts. When you try it, you will be amazed!

Instructions

  1. Cut each tomato into 4 wedges, then cut each wedge in half horizontally and add to a bowl. Add thinly sliced onion to the same bowl.
  2. Whisk the olive oil, red wine vinegar, salt and pepper in a small bowl. Pour the dressing over the tomatoes and onion and toss.
  3. Add the herbs and gently toss to combine. Rest before serving (a crucial step!). This can be made up to one day in advance.
