Maple Mustard Sweetpotato Chicken Skewers


These skewers are just the thing to whip together quickly on a school night for an easy meal or pack in your kids' lunchboxes. They also travel great for a picnic in the park.


  1. Whisk together the maple syrup, mustard, salt and pepper in a large bowl.
  2. Mix in sweetpotatoes, chicken and bell pepper pieces. Marinate for at least 30 minutes.
  3. Thread items onto skewers. Cook until the chicken reaches an internal temperature of 165°F.
  4. Serve warm or at room temperature.
