- In a medium saucepan, add oil and warm over medium heat.
- Add onions, green peppers and mushrooms and saute for 5 minutes, or until mushrooms begin to release their liquid.
- Add garlic and collards. Cover and cook, stirring occasionally, for 5 minutes, or until the collards are just wilted. Stir in remaining ingredients and mix well.
- Pour into a baking dish with covered lid and bake for 15-20 minutes at 350 degrees Fahrenheit. Serve.
